There were some interesting follow up articles after the Terra Madre events last year. One very intriguing article by Riccardo Astolfi, reflecting on the musicality of bread, caught our attention.

Bread is flavor, tactile sensation, taste buds, the crunch of the crust, the persistent softness of the crumbs.
Bread is all of this, but it is also music, sound, melody.
When you take a bite, or when your hands make a slight impression on the surface, all of the crispness of the crust condenses into a single sound. When the bread responds to the warmth of the oven, it adapts to the air and to the outside temperature and makes a sound. I hoped to capture that beautiful melody.
